Oldest Marc Champenois on the market ever with a age count of 18 years old. Marc de Champagne, which became Marc Champenois, can only be produced from marc from the grape harvests in the protected area of origin of the AOC Champagne. Grape marc is made up of all the dry residues, i.e. the grape skins and the seeds. The stalk is separated from the marc before use and justifies the term “égrappé” usually appearing on certain labels. 160 kg of grapes produce 58 kg of solid matter of Marc Champenois. In Champagne, the marc is called “Aignes” in the local dialect.
